I have a friend with an S10 Blazer that has a 350 stuffed into it, and it's fun, so I can see it if you have a good engine from a wrecked car, and an otherwise junked Mustang. But doing it with parts from perfectly good (or otherwise repairable) cars is a waste.
Yeah, I've seen lots of builds like that S10, and those are tons of fun. I agree that taking two perfectly good cars to make a Frankenstein's monster like this is a terrible waste.
